Makeover Monday: From Easter Egg to Egg Salad for One {recipe}

A super-yummy sandwich.

Ever wonder what to do with all of those Easter eggs once the festivities are over? Well, I made a delicious egg salad. And, since I'm the only one who'll eat it around here, I made Egg Salad for One. Technically two. This recipe makes 1/2 cup, so there's enough for two sandwiches.
Easy Egg Salad for One (or Two)
(serving size 1/4 cup ~ 86 calories per serving)

Ingredients:
  • 2 hard boiled eggs
  • 1 tablespoon Miracle Whip Lite
  • 2 teaspoons Dijon mustard
  • 2 teaspoons lemon juice
  • Salt & pepper (to taste)
Directions:
Cut the peeled eggs into small pieces and transfer to a bowl. With a fork, mix in the Miracle Whip, the mustard, and the lemon juice, mashing the eggs a bit. Add salt and pepper to taste. Spread half the salad on a bread product of your choice. Nom. Nom. Nom.

I had mine on a Thomas Triple Health Better Start English muffin. They're only 100 calories. I added a sliced Campari tomato for an additional 5 calories. So, for a grand total of 191 calories, I had an awesome and surprisingly filling dinner. And I'll probably be having the same for lunch. After all, I'm the only one who'll actually eat it.

I cracked a bit more pepper over the top. Love it!

I hope everyone had an fantabulous weekend! I sure did. For Easter, we headed over to my grandparents' house for brunch and the annual Easter egg hunt. It's been storming here for the last few days, so the ground was soaked. We just kicked off our new Easter shoes and splashed around and made plenty of hippie jokes. I honestly can't even remember the last time I walked through the grass barefoot. It was a great day.
