I'm in love...with cinnamon frosting!


This past weekend Seán, my wonderful, amazing husband, turned to me and said, "I haven't seen cupcakes around here in a while." That was his not-so-subtle way of asking me to make some cupcakes. And not just any cupcakes. Christmas-ish cupcakes. What's more Christmas than gingerbread? Not much!

So, I found some gorgeous cupcake liners (The right liners for the right occasion is a must!) and went to work searching for a recipe that didn't require yet another trip to the grocery store. I found one at All Recipes called Gingerbread I. When I do this again, I believe I'll add some vanilla extract and will probably double the recipe to make taller cupcakes. These turned out kinda small. The cupcakes turned out firm, yet soft. Perfect.

To make the frosting, all I did was mix up a basic buttercream frosting and then added ground cinnamon to taste. I ended up using maybe three teaspoons of cinnamon. I knew I didn't want to bother "decorating" the cupcakes, so I really like the look of the cinnamon specks in the frosting. If you want to color your frosting, you should probably use cinnamon flavoring instead of the ground cinnamon.
